Wine and Dinner Pairing #2


I did this second dinner pairing tonight with my boyfriend. We picked out a Shiraz, White Zinfandel, and a Cabernet Sauvignon to pair with an appetizer of crackers topped with hot and sweet mustard, habanero cheese and summer sausage, dinner of pesto pasta with grilled chicken and onions, and dessert of Ben&Jerry's Phish food. Every time I go to the grocery store I see these weird "juice boxes" of wine so I decided to try one tonight to compare to the normal bottles that I usually go with.

First we did an initial tasting of each of the three wines so we could get an idea of what we were dealing with.

Vendange Shiraz:
This wine smelled fruity like candied cherries and slightly sour. It tasted blander than we thought it would with a little bit of cherry and an alcoholic aftertaste that lingered. Not bad for a "juice box" of wine!









Bay Bridge White Zinfandel:
This wine smelled bland, a little flowery, and with no alcohol. Overall, it didn't have much of a nose. The taste was sugary, floral, light, some goat cheese aspects, and reminded us of artificial sweeteners. There was no aftertaste; no taste lingered at all.








Bay Bridge Cabernet Sauvignon:
This wine smelled fruity, bitter, like dark cherries, slightly alcoholic, and with some blackberry components. It tasted sugary, fruity: like cherries and blackberries, and with a little bit of alcohol that wasn't very overpowering. There was a slight bitter lingering aftertaste.









Next we paired each wine with our first course: crackers  topped with hot and sweet mustard, habanero cheese and summer sausage.
Shiraz: This appetizer brings out the bitterness of the wine, brings out the alcohol in the wine, and takes away any taste of fruit that was there before. The spicy cheese is all we can taste in the aftertaste. Really good; we thought the spiciness of the cheese went really well with this wine.
White Zinfandel: This appetizer takes away the sugary, artificial sugar taste of the wine leaving behind sweetness with no alcohol. Again, the spiciness in the cheese is all we detect in the aftertaste. This was a pretty good pairing, but nothing special.
Cabernet Sauvignon: This appetizer makes the wine very bitter leaving behind only a strong taste of alcohol and a lingering bitter aftertaste. Not good!

Next, we tasted each wine with out main course: pesto pasta with grilled chicken and onions.
Shiraz: This meal brought out sour notes in the wine however, we could still taste hints of cherry at the end. There was not a very drawn out aftertaste.
White Zinfandel: This meal brought out some sourness and alcohol taste in the wine that lingered afterwards. This food completely changed the flavor of the wine leaving behind a little sweetness but not too much flavor overall.
Cabernet Sauvignon: This dinner made the wine taste very sour with no sweetness and no aftertaste. There was a lingering alcohol taste however.

Finally, we paired each wine with our dessert: Ben&Jerry's Phish Food ice cream.

Shiraz: This pairing brought out the taste of fruit and alcohol in the wine however making the wine very sour. The ice cream overpowered the taste of the wine leaving no aftertaste of wine at all.
White Zinfandel: This pairing brought out some bitterness in the wine but the chocolate in the ice cream seems to overpower the flavor in the wine altogether. There was still some sweetness from the wine coming through however with no alcohol. This wine flavor cut through the strong flavor of the ice cream better than the Shiraz.
Cabernet Sauvignon: With this pairing we could only tasting the bitterness and alcohol in the wine with a sour aftertaste in our mouths even though the chocolate overpowered some of the sourness. Very bad pairing!

My Review: This wine smells sugary like sweet candy with a slight stinky feet aspect. It tastes like sugar with no alcohol and no aftertaste.

My Review: This wine smells fruity and flowery with a bitter, cherry, fruity, and light taste and sour aftertaste.

Tasting - "Breca Tovana Old Vine Garnacha"

My Review: This wine smells of black cherries and strawberry hard candy with a light bodied taste and alcoholic aftertaste that dries out your mouth.

Tasting - "Marques de Caceres Verdejo "

Wine Review: "Vivid straw colour. Fresh, clean and intense bouquet enlivened by notes of citrus fruit with a depth of pears and apples. Deliciously fresh and full in the mouth where racy, focused flavours deliver notes of minerals, lemon rind and green apples. Good length and a refreshing finish. Has all the character of the best from its appellation."

My Review: This wine smells stinky and like sour apple with a watery, light bodied taste that doesn't linger with no aftertaste. This tastes like watered down wine.

Tasting - "Dibon Cava Xarel-lo, Macabeo, Parellada"

Wine Review: "Made from 45% Macabeo, 25% Xarel-lo, 30% Parellada, the nose offers regal yeast and richness, while the palate has complexity to prop up apple, citrus and grapefruit flavors. Solid from front to back, with health and freshness. Cava, Catalan sparkling wine, is made mostly in the regions of Penedes, and the capital of cava is Sant Sadurni d´Anoia. Dibon is located in Vilafranca del Penedes, aproximately 20 Km from Sant Sadurni. The Dibon vineyard is in the process of becoming fully organic. It consists of 75 hectares of trellised vines 1000 feet above the Mediterranean Sea."

My Review: This wine smells sour and toasty and is very bubbly with a fruity taste and alcoholic aftertaste that lingers. very good!

My Review: This wine smells slightly sour and tastes like goat cheese. The taste is sweet but not sugary and has a no alcohol, Welch's grape juice aftertaste.

Tasting - "Tres Ojos Garnacha Calatayud"

Wine Review: "The 2012 Tres Ojos Garnacha contains 15% Tempranillo (I wonder why), and unoaked cuvée of 200,000 bottles that matures in vat for at least seven months before bottling. What I tasted was a very honest, fresh and fruit-driven red with aromas of cherries, garrigue and thyme with a medium-bodied palate, some weight and tannins that would do better with food. This is a red that sells for a song.”

My Review: This wine smells flowery and taste a little sweet, kind of bland, and has no taste of alcohol. There is not much of an aftertaste but does not dry out your mouth.
I enjoyed this wine without food. 

Tasting - "Torre Castillo Cosecha Monastrell"

My Review: This wine smells like cherry Twizzlers and flowers. The taste is sour and bitter and dries your mouth out a lot with an alcoholic aftertaste.

Tasting - "Chateau Suau Bordeaux Rose"

My Review: This wine smells sour and like strawberries and has a slight, fruity green apple taste. There is a sweet aftertaste. Good!

My Review: This wine smells very fruity and like apple cider. It tastes slightly sour and has an apple cider vinegar aftertaste. Good!

My Review: This wine smells like funeral flowers with no alcohol and also tastes like funeral flowers. It really dries your mouth out and has a bitter aftertaste.

My Review: This wine smelled like sugar and stinky feet. I was surprised at how carbonated/bubbly it was; this tasted like sugar and berries with no alcohol but with a bit of sourness. Good!

Tasting - "Paul Loreano Tinto Classico"

Wine Review: "Paulo Laureano’s Classico is a delicious blend of the native Portuguese varietals Trincadeira (40%), Aragonez (40%) and Alfrocheiro (20%). This is a full bodied red that reveals all that the terroir of Portugal has to offer. Light cigar tobacco and soft leather present beautifully on the nose. Dark, black fruits fill the mouth, but the wine flows smoothly over the palate, with a good bit of spice on the finish. Pair with spicy, cured meats and hard cheeses."

My Review: This wine had a sour, bitter, slightly stinky feet and funeral flower smell and tasted like funeral flowers and a little bit fruity. The aftertaste was bitter and reminded me of dandelions. Pretty good!

Tasting - "Bodegas Atalaya Laya"

Wine Review: "A blend of 70% Garnacha Tintorera, a.k.a. Alicante Bouschet, and 30% Monastrell; fermented in stainless steel, followed by four months in French oak.  Bright purple.  Cassis, blueberry, pungent herbs and mocha on the nose.  Smooth and open-knit on the palate, displaying fresh cherry and dark berry qualities and a hint of black pepper.  Finishes with gripping tannins and good length, leaving a subtle floral note behind."

My Review: This wine had a bitter, sour, alcoholic, yet slightly fruity/cherry/blackberry smell. It tasted fruity, kind of sweet, almost like candy and very dry with not a whole lot of aftertaste. Good!

Tasting - "Mars and Venus Chardonnay"

Wine Review: "A very nice value Chardonnay that comfortably over-delivers vs. its modest price tag. No oak here, just bushels of clean, crisp, Chardonnay apple and stone fruit with a hint of caramelized pineapple.  Juicy and clean, this is a mid-weight white that's just perfect for parties or weeknight sipping."

My Review: This wine had a stinky feet, sour smell with slight floral tones. The taste was very bland like water with no alcohol whatsoever. There was also no aftertaste.

My Review: This wine has a sour, bitter smell almost like unsweetened Welch's white grape juice with a little bit of alcohol. The taste is sweet with a little sourness on the end and no sense of alcohol. There is a sweet aftertaste.

Wine Review: "Lots of leather and dried fruit on this, but immensely enjoyable and held up well over the course of three days. A terrific find."

My Review: This wine smells of funeral flowers and stinky feet. The taste is the same as the smell on the finish with no sweetness that dries your mouth out at the end.

Tasting - "Pirovano Sangiovese Romagna"

My Review: This wine smells of cherries and flowers and slightly alcoholic. It tastes like cherry turnovers without the sugar and blackberries. The taste doesn't linger. Awesome!

Tasting - "Entrada Chardonnay"

Wine Review: "Fruity and floral on the nose and rich but not heavy on the palate.  Wonderful tropical fruit flavors are balanced by just a touch of French oak to round out the finish."

My Review: There was a little bit of an alcohol burn in the nose of this wine. The taste was sweet, tangy, light, buttery, and dry. There was not much of an aftertaste.

Tasting - "Protocolo White"

Wine Review: "Pale yellow.  High-pitched aromas of lemon zest and white flowers, with a piquant mineral overtone.  Dry, racy and focused, offering tangy lemon zest and green apple flavors and a touch of bitter herbs.  Closes with good clarity and cut, leaving a tart citrus fruit note behind.  This is pretty grown-up for the price, not to mention a superb value."

My Review: This wine smelled sour and like citrus and lemon and had a slightly sweet and no alcohol taste. There was a dry finish to this wine. Pretty Good!

Wine Dinner Pairing #1

Today I enjoyed a homemade three course meal and three different wines while constantly taking notes with my two friends. We had an appetizer of cheesy garlic bread, main course of Italian seasoned chicken with green peppers and onions along with marinara and onion penne, and finally Luigi's strawberry Italian ice for dessert. We tasted each of these with Merlot, Rose', and Beaujolais. 

First we tasted each of the three wines and recorded our initial tastings:
Name: Oak Leaf Merlot 
Variety: Merlot 
Region: California 
Country: USA 
Year: 2014 

Our Review: This wine has an alcoholic, bitter, yet slightly fruity smell and a bitter, sour, no sweetness at all taste. The aftertaste was sweet and lingering and had a slight hint of plum to it. Overall, we all agreed that this wine was nothing special.


Name: Rosis Sylla Sebaste
Variety: Rose'
Region: Piedmont
Country: Italy
Year: 2013

Our Review: This wine smells sweet, floral, like candy, and very fruity--specifically like strawberries. The taste is also very fruity however not very sweet and has hints of citrus. The aftertaste tastes like lemons and strawberries. Pretty good; we're excited to try this with the chicken as we predict it will pair well.

Our Review: This wine smells strongly of tropical fruits such as pineapple, mango, papaya, and passion fruit. There was no fruit taste in the beginning and the wine went down smooth with no alcohol burn. The aftertaste was slightly sweet and fruity. Good!


Now that we had an idea of how the wine tastes without the influence of food, it was time to start eating and pairing each wine with each course!
Up first, of course, was our appetizer: cheesy, garlic bread sticks
First up we tasted this appetizer with the Merlot. The cheesy, garlic bread sticks brought out the bitterness in the wine to the point where we could only taste bitter in the wine. There was a sourness component to the wine that was not there previously and a burn of alcohol on the finish. The garlic covered up any flavor of fruit in the wine and left an alcoholic aftertaste in our mouths. Overall, not a good pairing at all.
Second, we tasted this appetizer with the Rose'. Again, the cheesy garlic bread sticks brought out the sourness in the wine however we still got a slight strawberry taste but this time it tasted like pre-ripened green strawberries. The garlic was too strong for this wine and took away all of the original fruit taste. Terrible pairing!
Finally, we tasted this appetizer with the Beaujolais. Again, the bread sticks brought out the bitterness in the wine however less so in this wine that in the two previous wines. This time the wine flavor cut through the flavor of the garlic as we could still taste fruit. The bread sticks brought out more of an alcoholic aftertaste in the wine however not too bad. Still not a great pairing but definitely better than the first two.

Next, our marinara onion penne finished before the rest of the main course so we decided to record each separately to get the full effect.
Again we tried each wine with the pasta and recorded our findings.
First up, the Merlot. The pasta brought out the alcohol in the wine however was not nearly as bitter as it tasted with the appetizer pairing. There was no aftertaste as the tomato flavors in the marinara overpowered the wine but there was a slight alcohol burn.
Second, the Rose'. The pasta took away all of the fruit flavor in the wine and brought out the alcohol and there was still no aftertaste as the tomato overpowered the wine again. Not as good as the first pairing--actually not very good at all.
Finally, the Beaujolais. The pasta brought out the bitterness in the wine however it still tasted slightly fruity. This pairing left a bitter, alcoholic aftertaste in our mouths. This was the best pairing as far as the pasta went!

Next, our Italian seasoned chicken with green peppers and onions was done baking so we paired each of the three wines with the second half of our main course and took notes.
First, we tried this chicken with the Merlot. The chicken brought out more alcohol in the wine and some bitterness however there was still a slightly sweet and fruity aftertaste. Not too bad but a little too bitter for our liking.
Next, we tried the chicken with the Rose'. Right away we noticed that this dish brought out more fruitiness in the wine with no sense of alcohol and no bitterness. We still got a fruity aftertaste from the wine and all agreed that the wine went very well with the green peppers. Good pairing!
Finally, we tried this dish with the Beaujolais. At first we tasted fruitiness in the wine but then it got very bitter. The taste of the wine did not linger in our mouths as the chicken overpowered its flavor. There also was not a whole lot of alcohol taste. Overall this pairing was voted second among the three.





Now that we finished dinner, it was time for dessert! We bought a box of Luigi's Italian ice and decided to pair the strawberry flavor with each of the three wines.
First, we tried this sorbet with the Merlot. The Italian ice made the wine taste bland and covered up most of the flavor of the wine overall. There was no taste of alcohol and the aftertaste was purely the sugar from the sorbet. However, we did taste strawberry in the wine and therefore really liked this pairing!
Second, we tried the sorbet with the Rose'. The sorbet brought out even more strawberry and mango flavors in the wine and a slight alcoholic taste as well. The flavor of the wine lingered more with this wine than the Merlot however we thought the strawberry in both the wine and the sorbet paired together well. This was a good pairing but the Merlot was even better.
Finally, the Beaujolais. The sorbet made the wine taste very bland and took away all flavors of fruit in the wine as well. There was more alcohol burn at the end however it didn't linger. Not that good of a pairing.

And that concluded my first wine dinner pairing experience!

Tasting - "Crane Lake Riesling"

Wine Review: "Punchy lime and lemon mark this off-dry Riesling with a staccato rhythm, adding edge to honeyed tones of peach and honeysuckle. Exceptionally priced, it’s satisfying and elegant."

My Review: This wine smells sweet and sugary and has a sweet, pear taste. This wine has a sugary aftertaste; it's very good but too sweet for a whole bottle!
I enjoyed this wine without food.

Wine Review: "Shows a certain rustic simplicity now, with youthfully jammy flavors of blackberries, cherries and currants, sprinkled with cocoa and pepper and wrapped into dusty tannins."

My Review: Right away I noticed that this wine had a pretty maroon color and smelled sweet and slightly fruity. This wine really dries your mouth out and does not have a whole lot of flavor. It is also not sweet at all as the nose suggested. Not very good!
I enjoyed this wine without food.

Tasting - "Yellowtail Reserve Merlot"

Wine Review: "Round, velvety and mouthfilling, this is a satisfying Merlot at a bargain price. Aromas of black cherries and herbs fold in hints of cinnamon and mocha, while the flavors are generally fruity, but with a slightly tomatoey note. Soft on the finish. Drink now. "
 My Review: This wine has a fruity, slightly alcoholic, dark cherry smell and a sweet cherry, no alcohol taste. Very good! This wine dries your mouth out and has a little bit of an alcoholic aftertaste.
I enjoyed this wine without food.

Tasting - "Takutai Pinot Gris"

Wine Review: "Since this wine weighs in at 14%, the fruit was clearly very ripe. That ripeness is reflected in the flavors as well, which feature nectarine and honey accented by hints of white pepper. It’s full bodied and lush, with a long finish that mingles the sensations of sweet and spicy."

My Review: This wine has a sour smell that almost reminds me of Lysol cleaning wipes. The taste is sweet and fruity with a sweet yet slightly sour aftertaste. Good!

Tasting - "Mars and Venus Sauvignon Blanc"

Wine Review: "Citrus and gooseberry aromas are mild but typical of the variety. A basic citrus palate delivers modest tangerine and nectarine flavors which lead to a mild, pithy finish showing light citric notes."

My Review: This wine smells like Welch's white grape juice and has no alcohol smell at all. The taste is not sweet at all and very sour with an alcoholic aftertaste. Not my favorite!
